    This is a Penney family favorite for dinner sides.

    Red potatoes cubed, thrown in a bag with olive oil, salt, and pepper, shaken up, and then throw on a baking sheet. Do the same for the asparagus and Brussel sprouts. Add a little parmesan cheese if desired. OK, add a lot of parmesan cheese regardless.

    Bake for 425 for 25 minutes or depending on what you like. Great leftovers for the week if you are a meal prepper.

    Comes highly recommended, make sure you use indirect heat. Get one side of the grill good and hot. Put the bed of lemons on the other side. It takes awhile but worth it ??

    Grilled Striper fillets ( indirect heat ) on a bed of lemons . Finished product Striper tacos.

        That looks so freakin good! Cannot beat fish tacos. I need to try it on a bed of lemons, I have never done that before. Great share!

    Instant Pot Pepperoncini Roast ?

    I made this for the family the other night, and it was a huge HIT! Even our little ones who generally do not like these types of meals ate it up! I mean, who would think that pepperoncini’s and roast would spark a kid’s taste buds, but it does!

    We also had salad and parmesan-crusted red potatoes.

    Potatoes- slice the potatoes in 1 x 1″ cubes, throw in a ziplock with salt, pepper, and olive oil. Shake it up, put it on a cookie sheet in the oven on 350 for about 20-25min.

    Slow Cooker Southwest Pulled Flank Steak

    2 lb flank steak- throw it in the slow cooker sprayed with olive oil or avocado oil

    Sauce: 1/3 cup red onion (diced), 1/2 tbsp ground cumin, 1 tbsp chili powder, 2 tbsp tomato paste, salt & pepper to taste (pinch), 1/3 cup water

    Mix the sauce ingredients and pour over steak, put on both sides of steak

    Cook on high for 4 hours or low 6-8. When meat is about 75% done pull out and shred with forks and add back to slow cooker for the sauce to soak into the meat. Finish time or until meat is done. ENJOY!
